Grape Varietal: Nebbiolo 60%, Barbera 40%
Characteristics: Passione matches the whole meal superbly. Ruby red and rich, complex taste.
Vinification: Manual harvest, 2nd half of September. Crushing and destemming is followed by maceration in contact with the lees of the 3 types of grapes separated. Clarification and final fermentation in stainless steel vats at controlled temperature, before passing the new wines to wooden casks.
Aging: 18 months in second passage Austrian oak barrels and bottle.
